Are you trying to make chocolate confections (candy) OR are you trying to make pure chocolate from scratch.
If you are wanting to make gourmet chocolate candies Merckens, Callabeaut and Nestle/Peters as well as Valrhona, Guittard and Ghiradelli are all available online and will ship anywhere in the world I would expect.
If you want to actually manufacture your own chocolate from the cacao bean... I have never tried that but know there are many sites with that info on them! Good luck.

Yes, you can blend all flavors of chocolate: Milk, Semi Sweet and white chocolate together in various proportions to create wonderful personal blends. The only caution is to use the same quality of each when blending. If you are using premium dark chocolate, use premium milk and white in your blends. When molding with REAL chocolate, it's fun to swirl two flavors together giving you a marbled look in your finished pieces. To do this, temper two flavors, and at the very last minute combine both into one batch but DONT mix. S you use the marble effect will be created.

You can store pure chocolate (molded chocolate confections) for up to a month at room temperature. However, the quality will diminish and the taste will be less than wonderful. Best to enjoy your gourmet candies right away. ALSO, any confection containing dairy (heavy cream) or nut meats or fresh fruit will spoil quickly. All gourmet candies that do not contain preservatives should be enjoyed quickly. A The wonderful thing about making home made gourmet confections is that they DO NOT contain preservatives!! RIGHT?
