    I liked the free videos and learned some very interesting fact on premium chocolate. I have noticed that chocolate companies warn you about shipping chocolate in warm to hot weather, but what about cold weather? Should I be concerned if the weather is going to be below freezing(32F) for a period of time? I live in Minnesota and we may get week(s) when the temp will never get above zero.

    Cool temps are perfect for candy making! If your kitchen is 70 degrees awesome! Doesn’t matter if freezing outside ! Wet, heavy rain, high humidity can be a problem when tempering chocolate and making toffee…. Dry cold temps are THE BEST!

    Hi Dennis,
    Thanks for your comments and question re shipping chocolates/confections in freezing temps. Reality is they will not be in a freezing climate that long, and even if they did freeze, they would slowly thaw (in their gift pack) and thus be just fine. The problem occurs when people freeze chocolates and then display them in a warm party environment. The extreme temp change between freezer and warm room causes chocolates to sweat as they thaw… then they bloom due to the condensation.
    If you chocolate experience severe temp changes in their gift box (untouched) and they are allowed to slowly reach room temp (in their gift box) they will be fine. Hope this helps 🙂 Thanks again
