You’ll learn how to think like a confectioner, work with precision, and create elegant, exceptional confections every time.
Curiosity and enthusiasm PLUS enough experience in candy making to realize you want to learn MORE, and truly begin your path to mastering the skill of making quality confections. Beginners will gain a strong foundation, while more experienced candy makers will deepen their understanding and refine their personal techniques. Because we focus on the principles behind the craft, everyone leaves with new skills, greater confidence and a strong positive approach to the potential available.
Not at all :) The kitchen equipment/tools required for specialty candy making (at home) are surprisingly simple. The one exception is a reliable CANDY-grade thermometer. A supplies list (Home-Based candy kitchen supplies list) is posted elsewhere on this site.
Many students attend because they love candy making and want to elevate their skills, while others are exploring or growing their home-based confectionery business. Well beyond following recipes, our course/experience focuses on exceptional, in-demand, and scalable craftsmanship. You’ll learn the principles behind premium chocolate, working with sugar, as well as many PRO confectionery techniques, so you understand why things work—not just how to follow instructions. This approach gives you the confidence to create, troubleshoot, and develop your own exceptional "signature" confectionery creations.
The course is led by Lynn Hawks, a confectioner with more than four decades of experience crafting artisan chocolates and confections. Founder of Hawks Landing Gourmet Confections Lynn shares not only the techniques of gourmet candy making, but also the practical insights into starting, and/or elevating a current brand and running a successful home based confectionery business/product line, signature brand.
After more than forty years in the confectionery world, I’ve seen that truly great candy making is a prized craft. Recipes are everywhere, but the deeper understanding of technique, ingredients, and PRIDE in impeccable craftsmanship is the game changer. This course exists to share the knowledge, principles, and passion behind exceptional gourmet confectionery—so candy makers can elevate their product quality, build their brand, grow or start their business and experience the joy of creating something truly unique and amazingly authentic.
